Spanish Grits

  • 3 Cups Gruff ancient grain grits

  • 3 Tablespoons olive oil

  • 3 Tablespoons butter

  • 1/2 Cups diced onion

  • 3 Cups chicken broth

  • 3/4 Cup tomato sauce

  • 3 1/2 tsp chilli powder

  • 3 teaspoons cumin

  • 1 1/2 teaspoons garlic powder

  • 2 teaspoons oregano

  • 1 can mild green chilis

  • 1/2 cup diced fresh tomatoes(optional)


  1. In a medium saucepan, melt together olive oil and butter over medium heat. Add Gruff grits and onions, and stir to coat with oil/butter mixture. Cook, stirring frequently for about 3-4 minutes more until grits become lightly toasted.

  2. Add chicken broth, tomato sauce, spices, green chilies, and diced tomatoes(if using). Stir, then increase heat to high just until mixture begins to boil. Stir again, cover and reduce heat to simmer for 15 minutes. Remove from heat and rest covered for 5 more minutes.
